Back to the kitchen


Well actually, we never left. About a year ago now we launched our from scratch campaign trying to make foods we like at home without all the additives and such. My boys love fruit leather and, unless you catch a sale, it's really pricey. So after seeing an article in Kiwi magazine we decided to take those beautiful strawberries in the fridge and go for it.
Here's what you need:
A pint of strawberries (about two cups)
lemon and honey to taste

Seriously that's it!!! When I peek at all the stuff in a box of fruit rolls at the grocery store...yikes!

Here's what you do:
Puree the berries in a blender until smooth.


Then add as much lemon and honey as you would like. (We squeezed half of a small lemon into our batch a few drops at a time and added about 1 tbsp honey. My taste testers agreed we had a good berry taste.)
Next you set your oven to its lowest setting (mine was 170 degrees)
While your oven is prepping get out a baking sheet with a greased piece of parchment paper or aluminum foil.
Pour the strawberry puree onto the prepared baking sheet and smooth it out. Place in the oven for 6 hours. Yes I said 6 hours.
We put ours in right after breakfast and had the leathers in time for an afternoon snack.

They were way better than anything I've ever bought. Not kidding! The boys want to try mango next. Sounds yummy to me!
Even Kellen was digging the fruit leathers. Probably a little too much!
