Chocolate Tortillas (from AZ Republic)
1/2 cup flour
1/2 cup sugar
3 tbsp unsweetened cocoa powder
1/4 tsp salt
1/4 cup milk
2 egg whites
1/4 cup canola oil
1 1/2 tsp vanilla
Add dry ingredients to a mixing bowl and mix well. Add wet ingredients and beat all those yummy ingredients together with a mixer until smooth. Cover with plastic wrap and chill for a couple of hours. We chilled ours overnight since we had to run errands.
When you're ready, use a non-stick skillet (we don't have one, so we used cooking spray to keep from sticking) and pour about 1/4 cup batter into a heated 6-8 inch skillet. Quickly tilt so batter spreads into a circle. Cook about 2-3 minutes and flip. Cook another minute. If your batter is super thick like ours was, chef John a.k.a hubby advised that we put a little bit of water into the batter (less than 1/4 cup). And wouldn't you know it, we had the perfect consistency and he said the water would just evaporate off.


We were able to get 10 tortillas out of the batter. And eat them we did! The boys went all out with ice cream and strawberry stuffed tacos, but you could do just about whatever your heart desires. All fruit, a flavored cream cheese, crisp them up for nachos. Oh, the list is endless.
