Pickles

Nobody likes pickles in our family more than Judah.  Caleb won't touch them and Kellen just plays with them, so it's left to me, the hubby and Judah to finish a jar.  And leave it to a book to inspire Judah to want to make his own pickles. Well that and his dad telling him about all the things you can pickle. So when Judah spotted pickling cucumbers on a recent grocery trip, you can imagine what followed.  Yep, homemade pickles!  And they couldn't be easier to make either!
Start with a clean jar.  We used an old roasted red pepper jar.  Then gather your ingredients.  On top of pickling cucmbers, we added carrots, celery, green onions and mushrooms.  You can pretty much pickle anything you want.

Then gather white vinegar, fresh dill, garlic, whole peppercorn and mustard seed.  Now this is John's recipe, but if you'd like to try something on your own the internet is full of ideas.

Add your pickling candidates to the jar, followed by the herbs and spices.  We diluted our vinegar 1/3 cup of vinegar to 2/3 cups water and added it to the jar.  We had to add a bit more diluted vinegar to completely cover the ingredients.

Wait about two weeks and you'll have some yummy pickled treats.  Well, for some of your family anyway.  Judah and John sure enjoy their pickled goodies.
