Pumpkin week

OK, so I'm going to try something crazy this week. I've always wanted to do this and have always fallen just a little bit short. The goal? To show the boys how we can use our pumpkin in a recipe every day for a week. Now, we make pumpkin goodies and meals all the time, but never all in one week and never documented. (yikes - that alone may kill this experiment, but we'll see...) So let's get started.
Day 1- roasting and snacking
Cut that baby open and clean. Squishy fun for the boys.

They did a great job separating the seeds from the pulp.
We put the two halves in the oven at 350 degrees for about 45 minutes.
After the pumpkin cooled, Mom scooped out the pulp and pureed and pureed and pureed and pureed (you get the point). Nine cups later, we're done! Ready for our week of pumpkin yumminess.
And our day 1 pumpkin treat? Pumpkin seeds! Caleb requested cinnamon and sugar flavor while Judah wanted salty seeds. So we did a mixed batch. Caleb separated the seeds into groups of ten and counted 400 seeds (yea for adding math to the project).
So 200 for the sweet tooth and 200 for the salt man mixed with a tablespoon of olive oil at 200 degrees for about an hour. You don't have to guess which one batch disappeared first.
