Tortillas


Our first from scratch project of the year.....tortillas. My grandparents and mom always made it look so easy. I grew up with them making yummy corn tortillas from scratch. There is nothing like a fresh made, warm tortilla with cheese. My mouth is watering as I write! I was going to make corn tortillas with the boys but my local supermarket didn't have the masa. Really? I would think that is a staple item at most grocery stores in AZ, but apparently not, so we went the flour route. I have to say, I wasn't disappointed. They turned out pretty good and I would definitely make them again and again....
You'll need (depending upon your personal preferences):
2 cups all-purpose flour, whole wheat flour (in any combination you chose) I used 1 cup of each.
1/3 cup cold water plus more for getting the right consistency
6 tbsp cold butter, cubed
1 tsp salt

Mix flour(s) and salt until blended.


Add in cut up butter and, using a fork or your hands, mash together.

The dough should resemble little peas.


Then add cold water and mix well. Keep adding water until you have a moist, but not sticky dough. Roll it in to a ball.


Then smash ball into a disk on a well floured surface. Cut it into six equal pieces.
Roll each individual piece into a ball. Now get ready for some fun.
We don't have a tortillas press. I may have to kidnap my grandfathers. Just kidding mom. So how to make tortilla thin, well, tortillas? We used a pie plate. Yes, a pie plate. We placed the dough ball in a gallon sized freezer bag, and muscle man Caleb pressed the dough with the plate.
Looks nice and circly (not a word by the way). We did use a rolling pin on a couple of them since they seemed a little too thick. Hence the irregular tortillas.
Then cook them! 1-2 minutes per side.

Kellen sure enjoyed the fruits of his labor.
